FLEMISH BEEF AND BEER 
3 tbsp. bacon drippings
2 med. green onions, minced
2 garlic cloves, minced
1 c. mushrooms, sliced
2 lbs. boned, cubed chuck steak (can substitute venison)
2 c. beer
1/4 tsp. thyme
Flour, salt and pepper
1/8 tsp. nutmeg

Cook on stove top: 1 tablespoon bacon drippings, green onions, garlic and mushrooms until limp. Remove to 2 quart casserole. Dredge meat in flour, salt and pepper. Fry in 2 tablespoons bacon drippings in skillet until brown. Remove to casserole. Add 1 cup beer to skillet. Bring to boil to remove browned bits. Pour into casserole with the other cup of beer. Add thyme and nutmeg. Cover. Microwave 10 minutes on High. Stir. Cook 20 minutes on 50%. Repeat cooking time. Serves 4.

Since microwave ovens vary in power, you may need to adjust your cooking time.
