CRAZY LARRY'S MEATLOAF | |
3 lb. 80/20 ground chuck (or just lean ground beef) 1 lb. bacon (I use applewood smoked) 2 med. onions 2 med. green bell peppers (can use red or yellow) 5 med. cloves garlic 4 large eggs 12 to 15 slices of bread (can use more for drier loaf) 1 (18 oz.) bottle barbecue sauce (I used Bullseye Sweet & Tangy, can use other brands for different taste & heat) salt and pepper, to taste I ran everything through a meat grinder (course chop) except the ground chuck beef and eggs. You can do it all by hand, just takes longer. In a large mixing bowl, after chopping or grinding, add all the ingredients (EXCEPT the salt and pepper and barbecue sauce). Preheat the oven to 375°F. With gloved hands, or not, add the barbecue sauce to the mix and MIX IT UP!! Add the salt and pepper, and other spices, at this time. If you want to 'SPICE IT UP' now is the time, but REMEMBER the BBQ Sauce, MAY be Spiced, so be careful. Divide the LOAF into 3 parts, save two for later (can be frozen). Put the winning loaf into a oven safe dish or loaf pan. Can add BBQ Sauce to the top of the loaf before baking, or any other garnish. With the oven at 375°F, bake for 1 1/2 hours or until the meat temperature reaches 175°F. Should SMELL AND TASTE GREAT!!! Serves 5 or 6. Submitted by: Larry Peterson |
