PUMPKIN CAKE | |
1/2 c. shortening 1 tsp. maple extract 1 1/4 c. brown sugar 2 eggs 1 c. strained pumpkin 3 c. cake flour 1/4 tsp. baking soda 4 tsp. baking powder 1/8 tsp. salt 1 tsp. cinnamon 1/4 tsp. ground cloves 1/4 tsp. allspice 1/4 tsp. nutmeg 3/4 c. milk 1 c. chopped walnuts Cream the shortening and add in the maple extract. Add in the sugar gradually, creaming constantly until the mixture is light and fluffy. Beat the eggs until they are light and add them slowly to the creamed mixture. Continue beating; now stir in pumpkin. Sift together flour, soda, baking powder, salt, spices, and add them alternately with milk into creamed mixture, stirring after each addition. Lastly, fold in nuts. Bake at 350 degrees about 30 minutes. |
