SUGAR BUSH WALNUT CAKE 
1 c. egg whites (7)
1/2 tsp. cream of tartar
1 1/2 c. sugar
2 1/4 c. all-purpose flour
3/4 c. water
7 egg yolks
1/2 c. salad oil
2/3 c. walnuts
1 tsp. baking powder
1 tsp. vanilla
1 tsp. maple extract

Beat egg whites and cream of tartar until soft peaks form. Sprinkle 1/2 cup sugar, 2 tablespoons at a time. Beat until sugar and whites stand in peaks. Beat flour with water, 1 cup sugar, egg yolks, walnuts, salad oil, baking powder, vanilla and maple extract. Pour flour mixture over egg whites. Pour into a 10" tube pan. Bake at 325 degrees for 1 1/4 hours or until top springs back when touched with finger. Use any favorite icing.
