SWEET ONION AND HERB MAYO
SANDWICHES
 
3/4 c. reduced calorie mayo
3 tbsp. finely chopped dill
3 tbsp. finely chopped tarragon or parsley
2 tsp. finely grated orange zest
18 thin slices of soft white or egg style bread
Very thin slices of sweet onion (Vidalia, Maui or red)

Place whole unpeeled Vidalia onions in refrigerator and chill one hour before serving. Cut bread into 3 1/2" x 3 1/2" round pieces (even number). Mix mayo, dill, tarragon (or parsley) and orange zest. Spread 2 teaspoons of mayo mix on round piece, top with slice of onion and second round piece. Roll sandwiches in extra herbs (on edge of sandwich).
