FAVORITE BAKED BEANS | |
1 (2 lb.) pkg. Great Northern beans (lg.) 1 med. size onion 1-1 1/2 tbsp. salt pepper to taste (approx. 1/2 tsp.) 1 tsp. dry mustard 1 c. brown sugar 1/3-1/2 c. molasses Cubed pork, ham or bacon (I prefer bacon) Water Cover beans with water and let soak overnight. In morning, drain beans and cover with fresh water and boil gently 20-30 minutes. Drain and wash with cold water. Put in bean crock, add the whole onion, salt, pepper, mustard, brown sugar and molasses and cubed meat. Meat should be lean. Bake at least 4-5 hours starting at 400 degrees and turning down to about 325 degrees. Do not cover until it gets quite brown on top. May have to add more water if it boils down too much. If you prefer a slightly thicker sauce, you can add a little flour to cold water and stir into beans carefully, then simmer a little longer. |
