COCONUT CREAM PIES 
4 eggs, separated
1 c. sugar
1/2 c. flour
2 c. evaporated milk
2 c. water
2 c. coconut
2 tsp. vanilla
1 1/2 sticks butter
pinch of salt

Beat egg yolks. Combine yolks, sugar and flour; mix together, then add milk, water, coconut and salt in medium saucepan, mixing well. Cook over medium heat, stirring constantly until thick. Remove from heat. Stir in vanilla and butter. Pour into baked pie shells.

Meringue:

1/2 tsp. cream of tartar
1/2 tsp. vanilla
1/2 c. sugar

Beat egg whites with cream of tartar and vanilla until soft peaks form. Add gradually sugar, beating until stiff; spread on pie.
