PINEAPPLE COOKIES 
2 c. sugar
2 eggs, beaten
1 c. butter
1/2 tsp. salt
2 tsp. baking soda dissolved in 1 c. drained, crushed pineapple
1 tsp. vanilla
2 tsp. baking powder
4 c. flour

Cream shortening, sugar and eggs. Beat well. Stir in crushed pineapple mixture. Add vanilla, stir in sifted dry ingredients. Drop by spoonfuls on greased cookie sheet. Bake at 375 degrees for 12 minutes.
