SWEET POTATO SOUFFLE 
3 c. sweet potatoes, cooked and mashed
1 c. sugar
1/2 tsp. salt
2 eggs, beaten lightly
1/3 stick butter, melted
1 c. milk
1 tsp. vanilla
1 c. raisins

Topping:

Cover with marshmallows.

Preheat oven to 350 degrees. Mix together sweet potatoes and sugar. Add salt and eggs; stirring well. Add butter, milk and vinegar. Stir well. Pour into greased baking dish and bake for 35 minutes. Remove from oven. Cover with marshmallows, return to oven until marshmallows brown.

Yield: 6 servings
