STUFFED PEPPER CUPS 
6 lg. green peppers
1 lb. ground beef
2 (14 1/2 oz.) cans Del Monte original style stewed tomatoes
1 box UNCLE BEN'S® microwave rice (makes 2 full cups of rice) box size net weight 3.5 oz.
1 tbsp. Worcestershire sauce
1 tsp. salt

Cut off tops and clean out seeds from 6 peppers. Precook peppers on top of stove in boiling water for about 5 to 10 minutes. Drain water off peppers, place on sheet pan and sprinkle insides of peppers with salt.

Cook 1 pound of ground beef in deep frying pan until browned. Add 2 cans of stewed tomatoes to meat in pan and stir to mix together. Add 1 teaspoon Worcestershire sauce.

Add rice (uncooked) to meat and tomatoes. Stir together well. Cook on top of stove, covered, for 15 minutes. Take cover off and stir until liquid is absorbed. Preheat oven to 350 degrees. Stuff peppers with meat and rice mixture. Bake in oven for 25 minutes. Serves 3.

Since microwave ovens vary in power, you may need to adjust your cooking time.
