SPINACH QUICHE 
1 lb. fresh or frozen pkg. spinach, cooked lightly and drained
1 sm. minced onion
3 tbsp. butter
1/2 tsp. salt
1/4 tsp. nutmeg
Dash of pepper
1 c. light cream
1 lb. Ricotta cheese
1/2 c. grated Parmesan cheese
3 eggs, lightly beaten

Saute onion in butter (do not brown), add spinach and spices. Take off heat and set aside. In bowl mix cream, Ricotta, eggs and cheese. Add contents of frying pan, mix and pour into unbaked pie shell. Use 9 or 10 inch pan. Bake at 450 degrees for 50 minutes.
