SPINACH QUICHE (ORIGINAL) 
Preheat oven to 350 degrees. Saute the following in 3 tablespoons vegetable or olive oil:

3/4 c. chopped green pepper
3/4 c. chopped onion
1 1/2 c. sliced fresh mushrooms
1 1/2 c. chopped zucchini
1 1/2 tsp. minced fresh garlic

Beat together:

5 eggs
1 lb. Ricotta cheese
1 tsp. salt
1/8 tsp. pepper

Cook 10 ounces chopped spinach (frozen). Drain cooked spinach thoroughly, squeezing as much moisture out as possible. Add to egg mixture along with sauteed vegetables and 1 cup grated cheddar cheese. Mix until well blended. Pour spinach mixture into a greased 10" spring form pan and spread evenly. Bake at 350 degrees for 1 hour.
