RED VELVET CAKE 
1 1/4 c. sugar
1 c. butter
2 eggs
1 tsp. vanilla
2 tbsp. cocoa
2 oz. red food coloring
2 1/3 c. cake flour plus 3 tbsp. (sift 3 times)
1 tsp. vinegar
1 tsp. baking soda
1 c. buttermilk plus 1 tbsp.

Cream butter and sugar and add 1 egg at a time. Add soda and vinegar to buttermilk. Alternately add flour and buttermilk, mixing well after each addition. Add red food coloring and beat 3 to 4 minutes. Pour into 3 layer cake pans.

Bake at 350 degrees for 25 to 30 minutes. When cool, ice with: Cook 1 cup milk and 3 tablespoons flour until thick. Cover and cool. Beat 1 cup butter and 1 cup sugar until fluffy. Add the sauce and beat well! Add 1 teaspoon vanilla and 1 teaspoon butter extract.

Optional: Few drops food coloring. This will ice a 3 layer cake.
