RED VELVET CAKE 
2 eggs
1 1/2 c. sugar
2 1/2 c. cake flour
1 c. buttermilk
1 1/2 c. cooking oil
1 tsp. vanilla
1 tsp. baking soda
1 tsp. cocoa
1 tsp. vinegar
Red food coloring

Combine dry ingredients. Blend eggs, sugar, buttermilk, oil, vanilla, and vinegar. Add dry ingredients to mixture. Add red food coloring until desired color is reached. Bake at 350 degrees for 20 minutes. Cool and frost.

FROSTING:

1 box confectioners sugar
8 oz. cream cheese
1 stick butter
1 tsp. vanilla
1 c. nuts, if desired

Mix ingredients together. Frost cake after it has cooled.
