1 c. butter 1 c. sugar 1/4 c. Egg Beaters 1 tsp. almond extract 1/2 tsp. vanilla 2 1/3 c. flour, sifted 2 tsp. baking powder Cream butter and sugar together. Add next three ingredients. Combine flour and baking powder and stir into batter. Roll into 1" balls and place on a greased cookie sheet or a non-stick pan about 2" apart. Flatten with buttered glass dipped in sugar. Bake at 350 degrees for 8 to 10 minutes or until edges are brown. Remove and cool. Makes 4 1/2 dozen. Dough is easier to work with if chilled 1 to 2 hours. Another suggestion: Dip the rolled balls into sugar and place on cookie sheet and flatten with fork. |
