SUNDAY BRUNCH 
1/2 c. chopped green pepper
1/2 c. chopped onion
1/2 c. sliced mushrooms
1 c. Cheddar cheese
1 doz. eggs, beaten in 3/4 c. milk
2 c. chopped ham
1 lb. (approximately) frozen hash brown potatoes

Mix all ingredients, except cheese, and pour into a greased 8 inch pan. (I prefer 15 eggs and use a 13 x 9 inch baking dish.) Top with Cheddar cheese. Bake at 350 degrees for 1 hour. Do not overbake.
