SOUTHERN YAM PECAN PIE 
1 (16 oz.) can Sugary Sam mashed yams
1/2 c. brown sugar
1/4 c. granulated sugar
1/4 c. cornstarch
1 egg yolk
1/4 c. butter, softened
1 tbsp. grated orange rind
1/4 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 c. chopped pecans
1 (9-inch) unbaked pie shell

Preheat oven to 350 degrees. Blend yams, sugars, cornstarch, egg yolk, butter, orange rind, salt and spices in blender until smooth. Pour into unbaked pie shell. Sprinkle top with chopped pecans. Bake for 50 minutes. Garnish with dessert topping if desired.
