ARTICHOKE SALAD 
1/2 c. celery
1/2 c. onion
1 lb. bacon, cooked and crumbled (save some for top)
1 can artichokes, chopped coarsely
1 c. Hellmanns mayonnaise
Salt and pepper to taste

Mix all ingredients, saving some bacon for top of salad. Refrigerate until chilled. Prior to serving, sprinkle some crumbled bacon on top of salad.

It's great served in a tomato.
