CHICKEN ARTICHOKE RICE SALAD | |
1 pkg. chicken Rice-A-Roni 1 lb. chicken breast 1/2 c. chopped green onions 1/2 c. sliced celery 1 c. frozen peas 1/2 c. green pepper chunks 1/2 c. mayonnaise 2 (6 1/2 oz.) jars marinated artichoke hearts Prepare Rice-A-Roni according to directions. Cool. Poach chicken in water until done. Skin and cool. Drain 1 jar of hearts, use juice from second in salad. Combine all ingredients and refrigerate overnight. Serves 8-10. |
