SPINACH SOUFFLE 
1/2 c. butter, chopped up
2 pkg. frozen chopped spinach
1 carton (pint) cottage cheese
1 lb. Cheddar cheese, chopped in pieces
1 tsp. cream of tartar
3 tbsp. flour
6 eggs

Cook spinach slightly until you can chop through it. Put everything in shallow baking dish (cake pan size) and cook uncovered for 45 minutes to 1 hour at 350 degrees.
