SPINACH SOUFFLE 
2 pkgs. frozen chopped spinach or broccoli, thawed & drained
1 c. mayonnaise
1 can cream of mushroom soup
1 1/2 c. sharp Cheddar cheese, grated
2 eggs, beaten
Salt (to taste)
Pepper (to taste)

Mix all ingredients together in a casserole dish. Bake, uncovered, in preheated 350 degree oven for approximately 1 hour, or until knife comes clean.
