BROCCOLI SOUFFLE 
2 boxes or 1 bag chopped broccoli, cooked
1 c. grated colby or cheddar cheese
1 can mushroom soup
1 c. mayonnaise
1 med. onion, chopped
3 well beaten eggs

Mix everything together in 1 1/2 quart deep baking dish. Cover with foil. Bake at 350 degrees for 1 to 1 1/4 hours. Uncover the last 15 minutes. (Can be made the night before.)
