MOCK BROCCOLI SOUFFLE 
1 pkg. frozen chopped broccoli
1 c. mayonnaise
1 can cream of mushroom soup
3 eggs, well beaten
1 tbsp. onion, grated
Salt and pepper, to taste
1/4 c. cheese flavored crackers, finely chopped

Cook broccoli until tender. Drain well and blend in other ingredients, except for cracker crumbs. Sprinkle cracker crumbs over top of casserole. Pour into greased 1 quart casserole. Bake at 325 degrees until set in center, approximately 45 minutes. This can be mixed in the morning and baked for dinner. Serves 6.
