HOT CHICKEN SALAD (SOUFFLE) 
2 c. diced chicken or turkey (white meat)
1/4 c. onion
1 c. celery
1/2 c. green pepper
1/2 c. mayonnaise
Dash of salt and pepper
1 1/2 c. milk
2 eggs
6 slices bread
1 can Cheddar cheese soup

Usually 4 breasts (I boil them in butter, salt and water for 1/2 hour).

Grease baking dish. Cube 2 slices of bread in baking dish. Mix together onion, celery, green pepper, mayonnaise and chicken. Spoon over bread cubes. Put 4 remaining slices of cubed bread over mixture. Mix eggs and milk. Pour over bread slices. Cover with Saran Wrap overnight.

Bake at 325 degrees for 1 hour and 15 minutes. Spread Cheddar cheese soup over top of bread slices. Bake another 15 minutes. Serves 4 big portions.
