BROCCOLI OR SPINACH SOUFFLE 
1 pkg. chopped broccoli or spinach
3 eggs
3 tbsp. flour
6 tbsp. butter, melted
12 oz. sm. curd cottage cheese
1/4 lb. grated cheddar cheese

Cook and drain vegetable. Add well-beaten eggs, melted butter, flour and cottage cheese. Mix together. Place all in a greased 1 1/2 quart casserole. Top with grated cheese. Bake at 350 degrees for 30-40 minutes.
