BROCCOLI PUFF 
2 (10 oz.) pkg. frozen chopped broccoli
1 c. Bisquick baking mix
1 c. milk
2 eggs
1/2 tsp. salt
1 c. (about 4 oz.) Cheddar cheese

Heat oven to 325 degrees. Butter 5 1/2 cup souffle dish or 1 1/2 quart casserole. Cook broccoli as directed on package; drain. Beat baking mix, milk, eggs and salt with hand beater until smooth. Stir in broccoli and cheese. Pour into souffle dish. Bake until knife inserted halfway between center and edge comes out clean, about 1 hour. Serve immediately. 6 servings.

CORN PUFF: Substitute 2 (10 oz.) packages frozen corn for the broccoli.

SPINACH PUFF: Substitute 2 (10 oz.) packages frozen chopped spinach for the broccoli.
