BROCCOLI PUFF 
Heat oven to 325 degrees.

Butter a 5 1/2 cup souffle dish or 1 1/2 quart casserole.

Cook 2 (10 oz.) pkgs. frozen chopped broccoli as directed on package, drain.

Beat:

1 c. baking mix
1 c. milk
2 eggs
1/2 tsp. salt

With hand beater until smooth.

Stir in broccoli and 1 cup shredded Cheddar cheese. Pour into souffle/casserole dish. Bake until knife inserted halfway between center and edge comes out clean, about 1 hour. Serve immediately. 6 servings.

Corn Puff: Substitute 2 packages frozen corn for the broccoli.

Spinach Puff: Substitute 2 packages frozen chopped spinach for the broccoli.
