SAUSAGE AND ZUCCHINI CASSEROLE | |
3 med. zucchini 1 lg. Spanish onion 1 can stewed tomatoes 1 to 2 lb. ground sausage 1 (8 oz.) pkg. Mozzarella cheese, shredded 1 box garlic and cheese flavored croutons Slice zucchini and onion into 1/4 inch circles in a 2 quart saucepan. Boil onion and zucchini until tender, drain and set aside. Brown sausage and drain fat; put into the bottom of a 9 x 12 casserole dish. Add to this the zucchini and onion; next layer with stewed tomatoes, add croutons and finish with layer of Mozzarella cheese; put into a 350 degree oven until cheese is hot and bubbly. Serve as a main meal or side dish. |
