HOPPING JOHN 
1 (#300) can black eye peas with snaps
1/4 c. chopped onion or 1/8 tsp. onion powder
Dash cayenne pepper
1 tsp. bacon drippings or butter
2 c. hot cooked rice

Do not drain peas, bring peas and seasoning to a boil, stir gently, simmer on low heat for 15 minutes.

Serve peas and broth over hot buttered rice. Variation: Add 1/2 cup small pieces of ham when you add seasonings to peas. Proceed as above.

NOTE: Combining peas with rice creates a high protein dish. Can be used as a meat substitute.
