APRICOT JELLO SALAD 
1 lg. pkg. apricot Jello
1-2 bananas
1 med. size can crushed pineapple (drained, save)
1 (3 oz.) cream cheese (soften)
8 oz. Cool Whip
1/2 c. sugar
1/2 c. pineapple juice
2 tbsp. butter
1 egg, well beaten
Grated Cheddar cheese

Mix 1 large package of apricot Jello according to package directions. Add 1-2 bananas and 1 can crushed pineapple (drained). Let set.

Boil sugar, butter, pineapple juice and egg and stir constantly for 7 minutes. Refrigerate this mixture until cool, then mix with cream cheese and Cool Whip. Put over Jello and sprinkle with grated Cheddar cheese.
