RAVIOLI 
2 1/2 c. flour
1 1/4 tsp. salt
2 eggs, beaten with 1/2 c. water

Knead until smooth, let rest 1/2 hour and roll.

RAVIOLI FILLING:

1 lb. hamburger
1 med. onion, chopped
2 cloves garlic, chopped
Handful parsley, chopped (1/4 to 1/2 c. dry parsley)
Salt (to taste)
Pepper (to taste)
1 1/2 c. dry fresh mashed potatoes
1 bunch fresh spinach, cooked & chopped (or 1 pkg. frozen spinach)
Parmesan cheese, grated (to taste)
3 lg. eggs
Bread crumbs (to right consistency)

Brown meat; add onion and garlic. Add salt and pepper, potatoes, parsley, spinach, cheese and eggs. Add bread crumbs until thick enough. Taste and adjust seasonings.
