LOW CHOLESTEROL SPAGHETTI & MEAT
BALLS
 
SAUCE: :

1/2 c. green pepper, chopped
1 tbsp. canola oil
1 garlic button, mashed (opt.)
4 tbsp. sugar
1 onion, chopped
3 c. tomato juice
1 bay leaf
1 tsp. salt substitute (or more)
1 c. spaghetti, 1", uncooked

MEAT BALLS:

1 lb. ground turkey
3/4 tsp. salt substitute
Dash pepper
2 egg whites (opt.)
3 tbsp. parsley, chopped
1/4 c. milk
1/2 c. bread crumbs (2 slices)
Dash all spice

Mix all meat ball ingredients together and shape into balls the size of English walnuts. Use an iron skillet with lid or Dutch oven. Saute green peppers and onions in hot oil until onions are transparent (about 5 minutes). Add tomato juice, seasonings and spaghetti pieces. Place meat balls on top and cook, covered for 35 minutes on simmer.
