CRANBERRY NUT MUFFINS 
2 eggs, beaten
1/2 c. vegetable oil
1/2 c. honey
1 tsp. vanilla extract
1 1/4 c. whole wheat flour
2 tbsp. wheat germ
2 tbsp. bran
1 tsp. pumpkin pie spice
1/2 tsp. baking powder
1/2 tsp. baking soda
1 1/2 c. chopped fresh cranberries
1/2 c. chopped nuts

Preheat oven to 350 degrees. Butter or spray with Pam 12 cup muffin tin (or line with paper muffin cups.

In medium bowl, combine eggs, oil, honey and vanilla. Add flour, wheat germ, bran, spice, soda, powder; stir until mixed. Add cranberries and nuts. Pour into prepared pans. Bake 25 minutes. Makes 1 dozen.
