APPLE PANCAKES | |
2 cups apples, sliced thin (about 2 apples) 1 1/2 cups flour, sifted 1 tsp. baking powder 1/2 tsp. salt 2 eggs beaten with 1 1/2 cups milk or enough to make thin batter Add the apples to batter. Melt 2 tablespoons of olive oil or butter in a skillet. Drop batter by spoonfuls into skillet; lower heat and fry slowly to cook the apples until golden brown; then add another tablespoon butter and brown pancakes on the other side. Remove from pan and sprinkle immediately with sugar. Serve warm with syrup or sugar and cinnamon. Other fruits in season maybe substituted for apples, such as blueberries or cherries. |
