2 c. Bisquick
2 tbsp. sugar
1 egg
2/3 c. water or milk

Heat oven to 400 degrees. Grease round pan, 9 x 1 1/2 inches. Mix above ingredients and beat vigorously with fork or wire whip for 30 seconds. Spread in pan.

STREUSEL TOPPING:

1/3 c. Bisquick
1/3 c. packed brown sugar
1/2 tsp. cinnamon
2 tsp. firm butter

Mix streusel topping ingredients until crumbly. Sprinkle over coffee cake batter. Bake 20 to 25 minutes. Chris likes coffee cake after night games.
