FRESH BLUEBERRY COFFEE CAKE | |
1/2 c. sugar 1 c. flour 2 tsp. baking powder 1/2 tsp. salt 1/2 c. milk (or skim milk) 1 egg (or Eggbeaters) 2 tbsp. melted butter 1 1/2 c. blueberries TOPPING: 1/2 c. flour 1/2 c. sugar 1/4 c. butter 1/4 c. chopped walnuts 1 tsp. cinnamon Combine batter ingredients, except blueberries. Beat for 2 minutes to blend. Spread into greased 8 x 8 x 2 inch pan. Sprinkle blueberries evenly over batter. Combine topping ingredients; mix into crumbs. Sprinkle over blueberries. Bake at 375 degrees for 35 minutes to 40 minutes. |
