LIGHT APPLE CAKE 
1/2 c. all purpose flour
1/2 c. sugar
1 tsp. baking powder
1 tsp. cinnamon sugar
1/8 tsp. salt
3 med. apples, peeled and chopped
1 egg, slightly beaten
1 tsp. vanilla
Vegetable cooking spray

Combine first 5 ingredients in a medium bowl; mix well. Add apples, stirring lightly to coat. Combine egg and vanilla in a small bowl; add to apple mixture, stirring just until all ingredients are moistened. Spoon mixture into a 9 inch pie plate coated with cooking spray. Add toppings of your choice.

Bake at 350 degrees for 30 minutes or until lightly browned.
