LIGHT APPLE CAKE 
2 c. sugar
1 c. oil
2 tsp. vanilla
2 eggs, beaten
Juice of 1/2 lemon
3 c. flour
1 1/4 tsp. baking soda
1 tsp. salt
3 c. chopped apples
1 c. chopped nuts

Mix together first 5 ingredients. Add next 3 ingredients. Fold apples and nuts into the mixture. Bake in greased and floured 9"x13" pan for 1 1/2 hours at 325 degrees.
