MOCK VEAL CUTLET 
1 lb. coarsely ground beef
1 tsp. salt
1/4 tsp. pepper
1 tsp. chili powder
1 tbsp. Worcestershire sauce
1 sm. onion, minced
2 eggs, beaten
Cracker crumbs

Mix ground beef, salt, pepper, chili powder, Worcestershire sauce and onion in mixing bowl. Cover, let chill in refrigerator for 1 hour. Form meat into club steak size pieces, place back in the refrigerator overnight.

Dip cutlets in beaten eggs, and then in bread crumbs, coating well on both sides. Fry in deep fat on medium heat until golden brown. These may be frozen and cooked when needed. You can use flour instead of cracker or bread crumbs.
