Good hot from the oven or stored in a tight container 1 to 2 weeks. 2 lb. raisins 1 lb. brown sugar 3 c. leftover or freshly made tea. Soak raisins and sugar in tea overnight or for several hours. Next day, add alternately, 4 c. flour 3 beaten eggs 3 level tsp. baking powder 3 tsp. mixed sweet spices like cinnamon, nutmeg, allspice Turn into greased 8 x 4 x 3 inch high pans or other baking pans. Bake 90 minutes at 300 degrees. When cool may be glazed with melted honey. If desired, a teaspoon or two of marmalade may be added to the batter. Total preparation time is only 10 minutes, although one must wait several hours for raisins to soak. |
