CURRIED CHICKEN SALAD 
3 c. cooked, diced chicken
1/2 c. finely chopped celery
1 tsp. salt
2 tbsp. lemon juice
1 c. green seedless grapes
1 can mandarin oranges
1 c. mayonnaise
2 tsp. curry (or less, if you prefer)
1 tbsp. soy sauce (optional)
Toasted slivered almonds

Combine mayonnaise, curry and soy sauce. Combine chicken, celery, salt, lemon juice and 1/2 of the grapes and oranges (reserving other 1/2 of grapes and oranges for garnish). Add mayonnaise mixture to chicken mixture and stir well. Refrigerate for several hours to blend flavors. Serve on greens garnished with reserved grapes, oranges and almonds.
