THE QUEEN'S BAKED PINTO BEANS 
1 lb. or 2 3/4 c. dry pinto beans
1 c. tomatoes
1 med. tart apple, finely diced
1 med. onion, sliced
1 1/2 tbsp. dry mustard
1 clove garlic
1/4 c. molasses
1 1/2 tbsp. salt
1/2 c. bacon fryings or vegetable oil
1/4 c. tomato catsup

Thoroughly wash and soak 1 pound beans overnight. Cook in water which they were soaked until nearly done. Into baking dish or bean pot, place tomatoes, apple, onion, dry mustard, clove of garlic, molasses, salt, vegetable oil or drippings, and catsup.

Add beans, no need to stir, cover with water and bake in slow oven for 6 hours. Remove lid for last hour if you like bean brown and crisp.
