HONEY PARSNIPS 
6 med. parsnips
1 tsp. salt
1/4 c. honey
Boiling water
1/4 c. butter
Lemon juice
Cinnamon (optional)

Cut parsnips lengthwise in thin slices, then cut slices into pieces, about 1 1/2 inches long. Place in medium sized pan and cover with boiling water. Add salt and cook for about 20 minutes or until just tender. Melt butter in a large frying pan; add honey and cook, stirring until bubbly. Add parsnip, cover and cook over low heat for 5 minutes. Just before serving, sprinkle with lemon juice and cinnamon if you like. Makes about 6 servings.
