PARSNIP N'MUSHROOM PATTIES 
1 pkg. parsnips (about 10)
8 oz. fresh mushrooms
1 egg
1 c. bread crumbs (seasoned if desired)
2 tbsp. butter (optional, for frying)

Peel and cook parsnips in boiling water until tender. In mixing bowl or food processor, mash until semi smooth. Add mushrooms. If not using food processor, chop mushrooms first. Blend with parsnips. Mix in egg and bread crumbs. Form patties from mixture. Fry in butter on top of stove or spray 9 x 13 baking pan and bake at 350 degrees for about 10 minutes until lightly browned.
