DEEP DISH APPLE PIES 
2 1/2 c. peeled, diced apple
2 tbsp. brown sugar
1 tsp. quick cooking tapioca
1/8 tsp. ground nutmeg
1/8 tsp. ground cinnamon
1/3 c. all purpose flour
1/8 tsp. salt
1 tbsp. + 2 tsp. shortening
1 tbsp. cold water

Combine apple, sugar, tapioca, nutmeg and cinnamon; divide evenly among 4 (8 ounce) custard cups. Set aside.

Combine flour and salt in a small bowl; cut in shortening with fork or pastry blender until mixture resembles coarse meal. Sprinkle cold water evenly over surface; stir with a fork until dry ingredients are moistened.

Divide dough into 4 equal portions. Roll out each portion on a lightly floured surface to fit custard cups; place pastry over apples.

Cut slits in pastry to allow steam to escape. Bake at 400 degrees for 30 minutes. Serve immediately. Yield: 4 servings, about 139 calories per serving.
