WHITE BEAN SOUP 
1 lb. dried Great Northern beans
2 or 3 pieces ham with bone
2 1/2 qt. water
1 onion, chopped
1 tbsp. salt
1 or 2 red peppers

Wash and soak beans for 2 hours or more. Cook ham with water at a gently boil in a heavy covered pot for 1 hour. Add drained beans, onion, salt, pepper. Cook covered, stirring occasionally for 2 hours, or until beans crush easily against side of pan. Always check to be sure there is enough water to keep from sticking. If too dry, add boiling water.

When beans are tender, crush about half of them against side of the pot. This makes the soup creamy. Season as desired. Great served with cornbread and onions. Makes 6-8 servings.
