EGGLESS CHOCOLATE CAKE | |
3 c. all purpose flour, less 3 tbsp. 2 c. sugar 2 tsp. baking soda 1 tsp. salt 1/2 c. cocoa 2 c. cold coffee 1 c. vegetable or corn oil 2 tbsp. vinegar 1 tbsp. vanilla Sift together flour, sugar, soda, salt, and cocoa. Add coffee, oil, vinegar, and vanilla and beat until smooth using an electric mixer. Bake in greased and floured 9 x 13 pan at 350 degrees for 40 minutes or until tests done. As soon as cake is out of oven, cover it with the following icing. CHOCOLATE ICING: 1/3 c. soft butter 3 c. sifted powdered sugar 3 squares unsweetened chocolate, melted 3 tbsp. cream or evaporated milk, or plain milk 1 1/2 tsp. vanilla Mix butter and sifted powdered sugar until smooth. Stir in melted chocolate cream or milk and vanilla, adding a bit more milk if necessary. You could substitute cocoa for chocolate if needed. |
