EGGLESS CHOCOLATE CAKE 
3 c. flour minus 3 tbsp.
2 c. sugar
2 tsp. baking soda
1 tsp. salt
1/2 c. cocoa
2 c. cold coffee
1 c. cooking oil
2 tbsp. vinegar
1 tbsp. vanilla

Sift flour, sugar, soda, salt and cocoa together. Add coffee, oil, vinegar and vanilla. Beat until smooth using electric mixer. Bake at 350 degrees for 40 minutes in a 9"x13" pan.

FROSTING:

1/3 c. soft butter
3 c. sifted powdered sugar
3 tbsp. cream
1 1/2 tsp. vanilla
3 tbsp. cocoa

As soon as the cake is out of the oven, cover with icing, the warmth of the cake gives the icing a shiny glazed look. Cake gets better the older it gets.
