CORN FRITTERS 
2 envelopes (Complete) pancake mix
1 can whole kernel corn with juice
1/2 c. onion, finely chopped
jalapeno peppers (optional)

Mix all ingredients. Batter should be thick. Spoon by rounded teaspoon fulls into hot grease. Fry until golden brown.

Tip: Any leftovers can be warmed and served with syrup for breakfast the next morning!
