CORN FRITTER LIGHTS 
2 eggs
1 c. flour
1 c. Hungry Jack Extra Light Pancake Mix
2 tsp. baking powder
1 can creamed corn
1/4 c. sugar
Powdered sugar

Combine first 6 ingredients and mix well. Drop batter by spoonfuls into hot oil; fry until brown. Turn fritters over and brown other side. Sprinkle powdered sugar over fritters and serve warm. Makes 30 to 35 fritters, which can be frozen and reheated later.
